Gorge Chicken

Ingredients

1 package of boneless skinless chicken thighs

1 zucchini diced

1 package of fresh mushrooms sliced

1 cup of fresh spinach

1 large onion chopped

5 cloves of garlic minced

1 cup chicken broth

2 tablespoons of olive oil salt, pepper, garlic powder, paprika and parsley broth (optional)

2 cups brown rice

Directions

1. Season chicken with parsley - pepper - paprika and garlic powder

2. Saute in oil until brown - remove chicken and set aside

3. Add remaining oil - with all veggies - except spinach

4. Season with salt, pepper, garlic powder and parsley

5. Add chicken broth

6. Add back the chicken

7. Simmer on a low flame until chicken is cooked thoroughly

8. Add spinach - once wilted - set aside

9. Cook rice according to package

10. Serve chicken over rice - Delish !
